niin Team's Favourite Recipes To Cook At Home

With so much extra time on our hands these few weeks, everyone on the niin team has been spending a bit of time in the kitchen cooking up their favourite recipes. We can also all agree eating home these days is the safer option to eating out.

Jeanine's Homemade Tomato Sauce

This is an easy and effective dish which we always have several portions of in our freezer. Served with a big fresh salad and vinaigrette, I find it always hits the spot. :) 

My favourites to use are lovely large Rigatoni Pasta or Spaghetti ('al dente' of course!) Serve with a slab of parmesan cheese for each to grate onto their own dish and extra basil leaves for even more delicious natural flavour.

Ingredients
  • 2 tbsp  olive oil(extra virgin is best)
    2 garlic cloves, crushed and roughly chopped
  • 400g canned chopped tomatoes
  • 1 tsp vegetable stock powder or ½ crumbled stock cube
  • 1 tbsp tomato purée
  • 1 tsp sugar
  • 1/4 tsp Marmite
  • Few Basil leaves
  • Salt and pepper to taste, some may like to add chilli flakes too
Method
  1. Heat olive oil in a saucepan, add 2 crushed garlic cloves, then gently fry for 1 min.
  2. Tip in 400g chopped tomatoes, 1 tbsp vegetable stock powder or ½ crumbled stock cube, 1 tbsp tomato purée and 1 tsp sugar, then bring to the boil.

My Tip: Mix the stock cube with a dash of hot water and melt the Marmite into the empty tomato can and swish around before pouring into the pan (to avoid wasting any of the tomato juice)
  1. Reduce the heat, cover and cook for 15-20 minutes then uncover and simmer for a further 5 mins, stirring occasionally.
  2. To finish, tear a few basil leaves and salt and pepper into the sauce.

Tip: Keep some of the cooked pasta water before draining in a cup so in case the dish ends up too dry, you can use the liquid to stretch it to be more moist.

My favourite vegetable is spinach so I love any recipe with it but this recipe is so versatile, it has become one of my favourite dishes to cook. You can easily have this with rice, pasta, as a risotto or even with roti. It's delicious and defintiely my go-to dinner recipe on movie nights :)
